Quick, vegan curried garbanzo recipe

Cooking time: 30 min

For a quick, clean vegan protein, try my curried garbanzos. Easy and super tasty and is my new favorite. Plus it's clean eating and 21 Day Fix approved! 

Ingredients

1 tsp extra virgin olive oil
1/4 c chopped shallots*
1/4 c finely chopped leeks*
1 clove garlic, minced
3/4 c chopped tomatoes 
1 can organic, low sodium garbanzo beans
2 tsp curry powder 
1/4 tsp Himalayan salt

*Ingredient note: You can use any combination of onions, shallots or leeks, depending on what is in season or what you have on hand. 

Preparation

1. Saute leeks, shallots and garlic in olive oil for few minutes on medium heat.
2. Add tomatoes and a splash water. Simmer on low for 15 minutes. Don't let mixture dry out. Add water if necessary. 
3. Add entire can of garbanzos, curry powder and salt (if needed).
4. Simmer for 15 minutes and serve. 

That's it! Just that easy! Serve over simple quinoa and enjoy!
